Ingredients for 4 servings

1 pound ground turkey

1 egg

1 tablespoon mustard

1 tablespoon ketchup

3 tablespoons minced onion

1-2 tablespoons chopped dill pickle

½ teaspoon each salt and pepper

4 ounces good melting cheese like cheddar, cut into 4 rectangles

4 slices of rye bread (or similar wholesome bread)

2-3 tablespoons olive oil

2 cups coleslaw mix (or shredded cabbage)

1 teaspoon mayonnaise

2 tablespoons seasoned rice vinegar

1-2 tablespoon chopped herbs like parsley, arugula and chives

Salt and pepper to taste
