8 to 10 large dried shiitake mushrooms

1 (2-pound) kabocha or hubbard squash or pumpkin, peeled and seeded

Salt, to taste

2 tablespoons vegetable oil

1/2 pound firm tofu, cut into slices about 1/2 inch thick, 1 inch long and 1/2 inch wide

1/2 cup sugar

1/2 cup soy sauce

1/4 cup Asian sesame oil

1/3 cup finely chopped fresh ginger

1/4 cup sesame seeds

1/2 cup Shaoxing wine, or dry sherry

1 tablespoon rice vinegar

To serve:

Whole cilantro leaves

Sliced green onions
