Ingredients for 8 servings

8 eggs

1 tablespoon sunflower oil

1 small onion, finely chopped

4 tablespoons finely chopped eating apples

400 g pork sausage meat

200 g black pudding, casing removed and crumbled

sea salt and freshly ground black pepper

2 eggs

2 tablespoons cream

50 g seasoned flour

100 g dried breadcrumbs, preferably Panko

sunflower oil, for deep-frying

fresh watercress sprigs, to garnish

450 g beetroot, peeled and grated

1 large cooking apple, peeled, cored and grated

1 onion, finely chopped

50 g light muscovado sugar

225 ml white wine vinegar
