  • 2 Tbsps chopped fresh parsley leaves
  • 1 tsp dried oregano
  • 1 (28 oz) can diced tomatoes , drained,keep juice
  • 2 lbs ground beef
  • 2 cloves garlic , crushed
  • fresh ground black pepper
  • 2 Tbsps tomato paste
  • 1 pinch sugar
  • 3 scallions , finely chopped
  • 2/3 cup beef stock (or 1/2 can of broth)
  • 1 red chili pepper , seeded and finely chopped
  • 1/2 tsp ground cumin
  • 1 large onion , finely chopped
  • 1 large russet potato , peeled and cut into small cubes
  • salt
  • 1 Tbsp vegetable oil
