1/2 cup tahini

1/4 cup plain yogurt

1/4 cup water

Juice of 1 lemon

2 garlic cloves, minced

Pinch of kosher salt

1 cup dried chickpeas, picked through and rinsed

1/2 cup peeled and split dried fava beans, picked through and rinsed

1 small onion, finely chopped

1/2 small green bell pepper, cored, seeded, and finely chopped

1/4 cup finely chopped fresh curly parsley

2 teaspoons garlic powder

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Canola or other vegetable oil, for frying

1/2 teaspoon baking powder

6 pita breads, warmed

Shredded lettuce and sliced tomatoes, for serving

Tahini Sauce, for serving

Pickled turnips, for serving
