1/4 cup Emeril's Original Recipe Medium Salsa, or your favorite bottled salsa

2 tablespoons olive oil

1/4 cup thinly sliced roasted red peppers

2 onions, thinly sliced

3/4 pound chorizo, rough chopped

1 teaspoon ground cumin

1 teaspoon minced garlic

1/4 cup chopped green onions

1/2 cup chopped cilantro leaves

Sour cream, for serving

4 (12 or 14-inch) flour tortillas

1 1/4 teaspoons salt

12 ounces grated Monterey jack

1 tablespoon Mexican oregano, crumbled

4 small Yukon gold potatoes, boiled until tender, peeled and diced
