4 ounces fresh goat cheese (one 2x2 1/2-inch log)

1/3 cup olive oil

1 tablespoon fresh minced herbs (such as rosemary, thyme, tarragon or chervil)

2-3 slices sourdough bread, crusts removed

1/2 small clove fresh garlic, smashed & peeled

pinch of kosher salt

pinch of freshly ground black pepper

1/2 teaspoon Dijon mustard

1 tablespoon sherry or red wine vinegar

2 tablespoons extra-virgin olive oil

1 large handful mixed market greens

Flaked sea salt & freshly ground black pepper
