75 g bulgur wheat

One medium onion, diced

400 g (net weight) tofu

150 g cooked beetroot, grated

4-5 curry leaves

2 tsp. tomato puree

¼ tsp. turmeric powder

¾ tsp. garam masala

1 tsp. coriander powder

1 tsp. paprika

1 tsp. cumin seeds

2 cloves of garlic, finely chopped

8 half pitta pockets

2 tbsp. vegetable oil

8-10 tbsp. plain, natural yoghurt

15 g finely chopped coriander

15 g finely chopped basil

salt to taste

½ tsp. coriander powder

½ tsp. cumin seeds
