2 Tbs. finely chopped fresh ginger

3 Tbs. fresh lemon juice

1 tsp. Tabasco or other hot sauce

2 bone-in, skin-on chicken breast halves

Pinch kosher salt

1/3 cup soy sauce

4 bone-in, skin-on chicken thighs

1/3 cup sesame tahini (mix well before measuring)

Scant tsp. kosher salt
