Ingredients for 6 servings

200 g of flour, plus extra for dusting

70 g of unsalted butter

8 g of dried yeast

10 g of honey

1 pinch of salt

5 eggs

1 l of water

500 g of sugar

1 orange, juiced and zested

1 lemon, juiced and zested

butter for greasing

600 ml of whipping cream, whipped into soft peaks

1 punnet of raspberries, dressed with a drizzle of lemon juice and olive oil
