4 large egg whites

200 g soft dark brown sugar

200 g caster sugar

a pinch of table salt

500 g fresh rhubarb

250 g caster sugar

250 ml cold water

2 leaves of gelatine

100 ml boiling water

400 ml cooled rhubarb syrup from the poached rhubarb recipe above

250 ml whipping cream

2 tablespoons icing sugar, sifted

1 vanilla pod, split in half lengthways and seeds scraped out
