4 oz. uni (sea urchin roe), cleaned

2 1/2 tablespoons heavy cream

2 1/2 tablespoons unsalted butter, softened and divided

2 1/2 tablespoon extra virgin olive oil

2 shallots, diced

2 garlic cloves, minced

1 cup Arborio rice

2/3 cup dry white wine

4 to 6 cups vegetable stock or a mild fish stock, warmed

2 oz. Parmesan cheese, finely grated

1 oz. Pecorino cheese, finely grated

salt and pepper to taste

quail eggs, separated and whites reserved for another use

toasted and shredded nori
