Ingredients

The Pumpkins:

4 small pumpkins (such as Sugar Pie pumpkins), approximately 3 1/2-4 pounds each

8 garlic cloves, cut in half

4 tablespoons unsalted butter, at room temperature

Salt and freshly ground pepper to taste

The Risotto:

6 tablespoons unsalted butter, at room temperature

1 cup finely diced yellow onion

1/2 cup finely diced carrot

1/2 cup finely diced celery

1 tablespoon minced garlic

3/4 to 1 tablespoon (to taste) Madras curry powder

3/4 tablespoon salt

2 cups Arborio rice

1 1/2 quarts chicken or vegetable broth, brought to a simmer

1 cup slivered almonds, toasted

1 cup currants, soaked in warm water (optional)

1/2 cup freshly grated Parmesan cheese
