2 large shallots , chopped

2 cloves garlic , chopped

2 Tbsp. Dijon-style mustard

4 sprigs rosemary , chopped

4 sprigs thyme , chopped (leaves only)

5 Tbsp. fennel seeds , toasted and roughly ground


Freshly ground black pepper

4 boneless pork loin chops , each about 1/2 inch thick

1 quart apple cider

1 cup apple cider vinegar

1 cup packed light brown sugar

4 shallots , chopped

5 cloves garlic , chopped

1 piece (2 inches) ginger , thinly sliced

1 bunch fresh thyme

2 pieces star anise

2 sticks cinnamon

1 bay leaf

3 Tbsp. apple cider vinegar , to taste

1/2 cup golden raisins

1/2 tsp. ground cumin

1/2 cup julienned Granny Smith apple , about 1/2 apple

1/2 cup julienned Braeburn apple , about 1/2 apple

1 1/2 cups julienned fennel (from one small bulb), fronds reserved for garnish
