Ingredients for 8 servings

1 Kiwi (peeled and sliced thinly)

4 Kumquats (peeled and sliced thinly)

1 Banana (sliced)

2 tbsp sunflower seeds

2 tbsp goji berries

1 1/2 cup water

1/2 cup greek yoghurt

2 egg whites

2 cups oats

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

Nutmeg (optional)

Preparation

Slice all fruits put to one side, add goji berries and sunflower seeds to fruits. In bowl put together oats, baking soda, powder and salt. Mix fruit and seeds together with oats. Add water, yoghurt and egg whites. Add nutmeg or preferred spice for added flavour. Pour into loaf tin and oven bake preheated oven 180 degrees Celsius for 40 - 45 minutes. I put kumquat rinds on top with some sunflower seeds and sprinkle of sea salt and nutmeg. Serve hot or toasted with jam/marmalade or favorite nut butter.
