Ingredients for 4 servings

zucchinis

yellow squash

mushrooms

corn

red onion

scallions

hot chili pepper

baby bell sweet peppers

olive oil

grape tomatoes

oil

black pepper

lime

tortilla

feta cheese

arugula

guacamole

Preparation

1.

Chop all of the vegetables

2.

Heat olive oil in a pan

3.

Add veggies to pan

4.

Season veggies with red and black pepper and 21 seasoning salute from Trader Joes

5.

Squeeze in 1/2 a lime over sautéing veggies

6.

Cook veggies until tender

7.

Take tortilla shell and heat it

8.

Add feta cheese to sautéing vegetables

9.

To assemble scoop veggies into tortilla and add arugula and guacamole to the top
