1 1/3 cups (325 ml)  snow peas , ends trimmed and cut into 1-inch (2.5 cm) pieces 

1 lb (500 g) udon noodles (see Notes)

1 cup (250 ml) chopped bok choy  

3 green onions (white and green parts), coarsely chopped (see Tips) 

2½ tsp (12 ml)  sesame oil

6 cups (1.5 l)  vegetable stock  

¼ cup (50 ml) seasoned rice vinegar  

Freshly ground black pepper  

¼ cup (50 ml) low-sodium soy sauce
