1 teaspoon salt

1 teaspoon paprika

2 1/2 to 3 pounds oxtails, cut into 2-inch lengths

1/4 cup olive oil

2 onions, chopped

4 garlic cloves, minced

1/4 cup brandy

2 cups red wine

3 cups broth (chicken, beef, vegetable) or water

2 bay leaves

1 tablespoon dried oregano

3 carrots, peeled and cut into large chunks

Salt and freshly ground pepper to taste

1 to 2 tablespoons minced parsley
