I'm going to serve this on grilled bread with ice cold rosé, although I'm sure it would be delicious slathered on grilled lamb or even tofu skewers.

3 medium eggplants

kosher or sea salt, or similar flaky salt

olive oil

2 cloves garlic, peeled and minced

2 teaspoons paprika

1 teaspoon ground cumin

1/8 teaspoon ground cinnamon or allspice

1/8 teaspoon harissa, or hot sauce

1/4 cup (60 ml) water

2 tablespoons fresh lemon juice

1 tablespoon chopped parsley

optional: Pomegranate molasses, for serving
