2 tsp cornflour

½ tsp arrowroot or cornflour

150.0ml natural yogurt

FOR THE MERINGUES

4 egg yolks

4 egg whites

150.0g caster sugar

FOR THE SYRUP

2 tsp lemon juice

FOR THE ICE CREAM

1 quantity tangerine curd

225.0g caster sugar

FOR THE OPTIONAL EXTRAS

zest and juice of 8 tangerines

150.0ml crème fraîche

icing sugar , for dusting

150.0g unsalted butter , chopped into small dice

1 tsp orange juice or water

50.0g orange candied peel , cut into 5mm/0.25in dice (optional)

2-3 tbsp Grand Marnier

zest and juice of 6 tangerines

oil for greasing

4 tangerines , peeled and segmented

100.0g caster sugar
