  • 1/2 cup rice (I used Basmati)
  • 1 cup coconut milk
  • 1 cup black beans
  • 1 cup cooked shrimp, medium size
  • 2 mangoes, chopped (about 1½ cups)
  • ½ cup chopped red onion (quick-pickled if desired; see recipe below)
  • ¼ cup chopped cilantro
  • 1½ Tbsps fresh lime juice
  • Zest from one lime
  • ¼ tsp allspice
  • Salt to taste
  • 2 cups water
  • 3 Tbsps red wine vinegar
  • 2 Tbsps sugar
  • 1 tsp salt
  • 1 medium red onion, halved lengthwise and thinly sliced crosswise
