Ingredients for 2 servings

1/2 cup rice (I used Basmati)

1 cup coconut milk

1 cup black beans

1 cup cooked shrimp, medium size

2 mangoes, chopped (about 1½ cups)

½ cup chopped red onion (quick-pickled if desired; see recipe below)

¼ cup chopped cilantro

1½ tablespoons fresh lime juice

Zest from one lime

¼ teaspoon allspice

Salt to taste

2 cups water

3 tablespoons red wine vinegar

2 tablespoons sugar

1 teaspoon salt

1 medium red onion, halved lengthwise and thinly sliced crosswise
