1/2 cup water chestnut flour

2 teaspoons Nam Pla (Vietnamese fish sauce)

2 tablespoons oil of your choice

2 green papayas, thinly sliced

1 tablespoon Thai yellow or red curry paste, or 1 tablespoon Madras curry powder

1 bunch wild mint, chopped

2 tablespoons unsalted butter

Salt and freshly ground black pepper

1 small cucumber, sliced thinly

6 (1-pound) lobster culls

1 daikon, julienned

1 carrot, julienned

3 egg whites

2 diced shallots

Peanut or corn oil, for frying

1/4 cup rice wine vinegar

1 small fresh chile, seeds removed and diced

2 tablespoons oil, plus 2 tablespoons butter

1 small coconut

12 scallions, cut into thin rounds

1 cup white wine

1 teaspoon grated fresh ginger

1/2 cup heavy cream

2 tablespoons cold water
