Ingredients for 8 servings

1 ½ kg to 2kg chicken thighs (skinned or with skin)

250 ml natural yoghurt

8 cardamom pods, crushed to release the seeds

1 tablespoon fresh ginger root, peeled and grated

1 whole bulb garlic, all coves peeled and finely minced

1 1/2 teaspoons fennel seeds

1 teaspoon hot chilli powder

4 tablespoons vegetable oil

1 cinnamon stick

4 cloves

2 teaspoons cumin seeds

1 large onion, peeled and finely diced

4 large tomatoes, roughly chopped

1 teaspoon ground turmeric

1 tablespoon ground cumin

1 tablespoon ground coriander

1 bay leaf

350 ml cold water

Fresh coriander, to garnish
