1 tablespoon black peppercorns

6 large cloves garlic, minced

1 1/2 tablespoons coarsely minced coriander root

1 1/2 tablespoons coarsely minced coriander stems and leaves (cilantro)

1 1/2 teaspoons salt

1 tablespoon Thai Mekong whiskey or Chinese rice wine (preferably Shaoxing), (optional)
