Ingredients for 4 servings

2 x 900 g (2 lb) cooked crabs, chopped into pieces, reserving the brown meat from the main back shell

4 tablespoons groundnut or sunflower oil

4 fat garlic cloves, finely chopped

2.5 cm (1 inch) fresh root ginger, finely chopped

4 tablespoons tomato ketchup

3 medium-hot, red, Dutch chillies, finely chopped

2 tablespoons dark soy sauce

150 ml (5 fl oz) water

A few turns of the black pepper mill

2 spring onions, cut into 5 cm (2 inch) pieces and finely shredded lengthways

Bunch of coriander, chopped
