100.0g minced pork

1 carrot , grated

iceberg lettuce or cos lettuce and mint sprigs, to serve

vegetable oil , for frying

2.0 tbsp light soy sauce

2.0 tbsp cornflour

ΒΌ tsp ground white peppercorns

1.0 tsp sugar

50.0g oyster mushrooms , finely chopped

sweet chilli sauce , for dipping

7-8 spring roll wrappers (try an oriental foodshop, if you find them, buy extra and freeze)

2.0 tbsp finely chopped coriander

1 garlic clove , finely chopped
