2 red snapper fillets, 8 ounces each

1 tablespoon mild olive oil

1/4 cup fresh orange juice

2 garlic cloves, minced

1/4 cup minced cilantro

Cilantro Vinaigrette

2 tablespoons fresh lime juice

2 tablespoons white wine vinegar

2 tablespoons rice vinegar (unseasoned)

1 tablespoon minced shallot

1 garlic clove, minced

2 tablespoons minced cilantro

1/3 cup canola oil

Salt and pepper to taste

Kernels from 2 ears of steamed or grilled fresh corn

8 cherry tomatoes, halved
