2 cups Hollandaise Sauce, recipe follows

1/4 cup minced shallots

Freshly ground black pepper

2 teaspoons chopped garlic

12 large fresh morels, wiped clean

2 egg yolks

2 tablespoons plus 1 teaspoon butter

1/4 cup fine dried bread crumbs

1 fresh white truffle

White truffle oil, to taste

Juice of 1 half lemon

1 tablespoon chopped chives

1 pound fresh morels, chopped

6 ounces clarified butter, warm

HOLLANDAISE SAUCE

1/4 cup grated Parmigiano-Reggiano cheese

Salt

Drop of Tabasco

Salt and white pepper
