1 tsp Ground Black Pepper

1/2 tsp ground allspice

2 tsp Dried Oregano, preferably Mexican

Kosher Salt, to taste

4 x chicken breasts, bone in and skin on, about 2 pounds total

2 tbsp Olive Oil

1 x large white onion, halved and thinly sliced

3 x large carrots, peeled and sliced 1/4 inch thick on the diagonal

4 x garlic cloves, peeled and thinly sliced

1/4 cup Apple Cider Vinegar

4 x canned pickled jalapenos, stemmed, seeded and thinly sliced

1 cup Chicken broth
