  • 16 medium sea scallops , (about 8 oz/250 g)
  • 2 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 1 minced shallot
  • 1/4 tsp each of salt and pepper
  • 1/3 cup dry white wine
  • 1/4 cup 35% cream
  • 1 tbsp chopped fresh tarragon
  • 1 tbsp chopped fresh chives
