Ingredients for 8 servings

4 oz fresh ginger, peeled

1 cup mild molasses

1 cup sugar

1 cup vegetable oil

2 1/2 cup flour

1 tsp ground cinnamon

1/2 tsp ground cloves

1/2 tsp ground black pepper

1 cup water

2 tsp baking soda

2 x large eggs, at room temperature

8 x medium ripe yet firm pears, peeled, halved and cored

1/2 cup sugar, brown or white

1/2 cup water

3 tbsp butter

1 tbsp lemon juice

1 x vanilla pod, halved lengthwise

generous pinch sea salt

lightly-sweetened whipped cream mixed with a few spoonfuls plain yogurt, to serve
