Cherries In Vanilla White Wine Simple Syrup

This recipe is so simple it comes together in minutes. I used black cherries here, but any fresh cherry will work. I've eaten these straight up, over ice cream on angel food cake or over meringue. Ingredients for 10 servings

• 3 cups cherries, pitted and halved from top to bottom

• 1 cup dry white wine, I like the crispness of sauvignon blanc

• 1 cup of sugar

• 1cup of water

• 1 Vanilla bean, split and scraped of the paste

Preparation

1.

Combine the sugar, wine, vanilla bean/paste and water in a small saucepan and place it over medium low heat and bring it to a gentle simmer, stirring constantly until that all the sugar dissolves. Place the cherries in a large bowl Remove the liquid from the heat and pour over the cherries Cover with plastic wrap and infuse for at least 30 minutes Enjoy as a topping to any of your favorite dessert treats
