For the ice cream:

1 cup heavy cream

1 cup 1% milk

4 tablespoons light brown sugar

2 cinnamon sticks, broken in half

10 whole allspice pods

2 tablespoons cornstarch

1/4 cup carrot juice (I used Bolthouse Farms)

1 medium carrot, peeled

1 navel orange

1 1/2 teaspoon vanilla

4 tablespoons mascarpone

For Maple Walnuts:

1/4 cup walnut halves

1 teaspoon maple syrup

Pinch sea salt
