2 shallots, sliced into thin rings

1 clove garlic, minced

2 tablespoons freshly squeezed lemon juice

¾ cup roughly chopped fresh flat-leaf Italian parsley, plus extra to garnish

1 tablespoon roughly chopped fresh basil, plus extra to garnish

sea salt and freshly ground black pepper, to taste, if desired (optional)
