Ingredients for 4 servings

2 tablespoons olive oil

4 lamb shanks

3 onions, peeled and finely chopped

4 garlic cloves, peeled and finely chopped

1 carrot, peeled and finely diced

1 celery stick, finely sliced

3 fresh rosemary sprigs

350 ml red wine

2 x 400g tins chopped tomatoes

1 tablespoons balsamic vinegar

650 ml vegetable or beef stock

350 g brown lentils, rinsed

A good pinch of sea salt and freshly ground black pepper

Crusty bread, to serve
