3 Granny Smith or other tart apples, peeled, cored and cut into 1/2-inch thick slices

1 1/2 tablespoons walnut oil

1 tablespoon apple cider vinegar

1/2 teaspoon freshly ground black pepper

1 cup baby arugula

1/2 cup chopped walnuts, toasted
