Ingredients for 8 servings

2 ripe pears

125 g dairy free margarine

250 g caster sugar

1 tsp vanilla extract

2 flax eggs (2 tbsp of ground flaxseeds (linseeds) & 6 tbsp water)

200 g self-raising flour, sieved

50 g cocoa powder, sieved

150 ml strong coffee, made with 2 heaped tsp of granules and left to cool
