Hi Cristina and ciao dalla Maremma Toscana.Very nice dish, but!I've to say that this is not the Carbonara, but a revised one....!!! Because we do not use peas, milk or cream, not shallot, not mint....You forgot black pepper ....Sorry but I must!

It was delicious! But I decided not to make it with peas...and it still came out yummy!

Ingredients

2 cups of fresh peas

3 tablespoons of Extra Virgin Olive Oil

2 ounces 1/4″ thick pancetta, diced into small cubes

2 tablespoon finely chopped shallot

8 ounces fresh spaghetti or linguine pasta

1 cup of low-fat milk, chill taken off

1-1/2 cups freshly grated Parmesan cheese plus additional for sprinkling

30 small fresh mint leaves, for garnish
