Ingredients for 6 servings

8 plum tomatoes

1 kg of lean diced lamb leg, or shoulder

1 onion, chopped

3 garlic cloves, peeled and finely sliced

1 tsp of paprika

2 tsp of thyme leaves, chopped

2 tsp of rosemary leaves, chopped

2 red peppers, de-seeded and chopped

725 ml of chicken stock

2 tbsp of olive oil

3 pinches of salt

1 pinch of pepper

500 g of penne pasta
