1 lb fresh shrimp
1 tsp red curry paste
1/2 cup freshly chopped rosemary, thyme, and taragon
1/4 cup sweet orange pepper
1/4 cup julienned sun-dried tomatoes
1 tsp coriander powder
1 tsp cayenne pepper
1/4 cup diced green onion
1/4 cup diced onion
1 1/2 tsp garlic powder
Peel and devein shrimp.
Spray cooking spray of choice ( I use olive oil cooking spray)
When shrimp are pink and plump, add garlic powder, cayenne pepper, coriander powder, 1/2 of chopped herbs, onions, and peppers. Cook for an additional 3 minutes so shrimp soak up flavor
Turn heat down to low and add tomatoes and curry paste.
Stir for a minute
Place on dishes and garnish with remaining chopped herbs.
