1 carrot, coarsely chopped

1 shallot, halved

4 cups water

10 medium fingerling potatoes (about 1 pound)

3/4 cup plus 2 tablespoons pure olive oil

1 pound medium zucchini, cut into 1/2 -inch chunks

1 pound medium yellow squash, cut into 1/2 -inch chunks

Salt and freshly ground pepper

1/2 pound chorizo

1 cup all-purpose flour

3 red bell peppers, cut into 1/2 -inch chunks

1 large onion, coarsely chopped

2 large garlic cloves, minced

2 large tomatoes—peeled, seeded and coarsely chopped

1/2 cup dry white wine

2 bay leaves

1 thyme sprig
