Ingredients for 4 servings

3 dried chiles, seeded and minced

3/4 pound boneless lamb, sliced paper thin (this is easier to do if lamb is partially frozen)

2 whole pods star anise

1 tablespoon sugar

1 teaspoon sesame oil

2 tablespoons black vinegar

1 teaspoon sesame paste

8 cups rich lamb or chicken stock*

1 cup black vinegar

Star Anise Black Vinegar Reduction, recipe follows

1 tablespoon garlic, minced

1 pound leafy greens, such as spinach, bok choy, or Napa cabbage, chopped into bite-size pieces

6 green onions, finely chopped

Sesame Chile Sauce, recipe follows

1 tablespoon ginger, minced

3 cloves garlic, minced

4 ounces dried bean thread noodles, soaked and cut into bite-size pieces

1/2 cup soy sauce
