Ingredients

8 slices bread, preferably sourdough or sour rye

3 to 4 tablespoons soft butter, or enough to butter the outside of each sandwich

1 6-ounce can tuna in olive oil, drained and flaked

1/2 roasted red pepper, finely chopped or mashed

1 tablespoon extra virgin olive oil

2 tablespoons mayonnaise, or to taste

2 to 3 green onions, thinly sliced and/or 2 tablespoons chopped flat-leaf parsley

1/2 teaspoon paprika, or more to taste

A drop or two of lemon juice, to taste

1 teaspoon fresh thyme leaves or chopped parsley

Salt and pepper to taste

About 8 ounces sharp cheddar, preferably white, sliced thinly, or enough cheese to cover the bread generously
