1/2 lb Mushrooms,white button or portobello, quickly washed, then chopped moderately fine

1 tsp Coriander Seed, lightly crushed in a mortar and pestle

3 tbsp Olive Oil

2 x garlic clove, smashed

1 tbsp Lemon Juice

2 x Thyme sprigs

4 tbsp dry white wine

Salt and pepper to taste

Parsley, Curly to garnish
