Ingredients for 4 servings

4 carrots

as much  rice as desired

40 - 60 peices  fried shrimp

1 cup red vinegar

2  cucumbers

Preparation

1.

Skin the cucumbers and throw away the cucumber skins

2.

Shave the carrots and cucumbers into small pieces into a large bowl

3.

Place rice into a large bowl

4.

Pour red vinegar into the large bowl of rice

5.

Stir the rice and the red vinegar with a large wooden spoon (add water to the spoon so the rice doesn't get stuck to the spoon)

6.

Scoop about 1/4 rice and spread out on a sushi roller

7.

Place 1 sheet of seaweed onto the rice

8.

Take about 1/4 of the carrots and cucumbers onto the rice and seaweed

9.

Roll the sushi

10.

Cut the sushi with a wet knife into 8-10 pieces

11.

Repeat steps 6-10 3 times

12.

Serve immediately
