This was really good! Per the recipe, it works, but you can add other stuff, so you should make extra sauce. I added veggie sausage and a little more chard and extra garlic. We were really happy with this!

Ingredients for 6 servings

12 ounces elbow macaroni

1 medium rainbow chard, tough stems removed and chopped

3 tbsp olive oil

1/2 x chopped yellow onion

1 x garlic clove, chopped

1 medium Yukon Gold potato, peeled and cut into quarter-inch slices

salt and freshly ground black pepper

2 cups vegetable broth, homemade or store bought

1/2 tsp turmeric

3/4 tsp sweet paprika

1/2 cup unsalted roasted cashews

1 tbsp fresh lemon juice

1 tsp dijon mustard

1/2 cup dry bread crumbs
