8 ounces bacon (5 thick slices), diced

2 onions, thinly sliced

2 tart green apples, peeled, cored and diced

1 large head red cabbage (about 3 1/2 pounds), quartered lengthwise, cored and thinly sliced

5 cups water

3/4 cup apple cider vinegar

1/4 cup sugar

2 cinnamon sticks

2 bay leaves

15 juniper berries (optional; see Note)

Freshly ground pepper to taste

2 to 3 teaspoons salt, or to taste

2 tablespoons unsalted butter
