Ingredients for 4 servings

1 cup oat flour

1 tsp baking powder

1 tsp cinnamon

1 tsp ginger

1/8 tsp salt

1 cup grated carrots

1/2 cup sugar, syrup

1/4 cup brown sugar (pineapple chunks)

3 tbsps applesauce

1 egg

2 egg whites

1 tsp vanilla extract

1/4 cup greek yogurt

Preparation

1.

Preheat oven to 350.

Combine flour, baking powder, cinnamon, and salt. Add carrots.

Beat sugars and applesauce; add eggs. Add vanilla and Greek yogurt. Add flour mixture and beat.

Bake for 30 minutes.

5.

To make frosting: melt cream cheese, butter, vanilla extract and powdered sugar.
