1 large ear fresh sweet yellow corn

2 tbsp extra-virgin olive oil

2 jalapeno peppers

4 slices thick-cut black peppered bacon, cut in 1/2-inch pieces

1/2 medium red onion, diced

1 garlic clove, minced or pressed

3 medium tomatillos, husked, cored and diced

1/3 cup seeded and quartered grape tomatoes

1 medium Haas avocado, peeled and diced

1/4 cup chopped cilantro

1 tbsp freshly squeezed lime juice

1/2 tsp fine sea salt

1/2 tsp freshly ground black pepper

1/8 tsp ground cumin

6 medium Boston, bibb or butter crunch lettuce leaves, or hearts of romaine lettuce leaves or red cabbage leaves

1 lime, cut into 6 wedges for garnish, optional
