Ingredients for 12 servings

1 block cauldron tofu

1 green pepper, diced

1  leek, chopped

1-2 onions, diced

3  large cloves of garlic, chopped

3 teaspoons chili flakes

2-3 stalks of celery, diced

3 tablespoons dried herbs

5 grated carrots

1/2 small stale seeded bloomer (for breadcrumbs)

1 tin chickpeas, rinse well

salt and pepper

1 bunch parsley

Preparation

1.

Put bread in food processor to make breadcrumbs. Remove and set aside

2.

Put all ingredients (apart from grated carrot, breadcrumbs and chickpeas) into food processor and mix together

3.

Empty contents into a big bowl. Add breadcrumbs, grated carrot and chickpeas. mix well with a big spoon

4.

Shape into burgers and shallow fry in a non stick pan on a medium heat for 10 minutes, turning occasionally
